Lori Kay Eubanks

On Monday, October 12, 2020, our dear, sweet and spunky, Lori Kay Eubanks left this life to continue her adventures in the next life. Since January of 2017, Lori courageously and bravely put up an honorable fight with Triple Negative Breast Cancer. She was always strong in her determination to live her life fully and with great purpose.

Lori Kay Eubanks was born January 6, 1972 in Salt Lake City, Utah to Douglas Gene Eubanks and Carol Ann Strobel Eubanks. From that day forward the world was never the same. Lori came into this world with a zest for life and adventure. She was an avid snowboarder, a certified scuba diver, a roller coaster enthusiast, and a world traveler. Her travels took her to Croatia, Germany, Netherlands, Italy, Costa Rica, hiking Pikes Peak, Banff, Yosemite, just to name a few. However, a couple of her favorite places to go were Moab, UT and Durango, CO. She loved anything that was outdoors and especially appreciated spending time with loved ones.

Her greatest joy and love however, was her son, Avery. Lori was a devoted and loving mother. Her time was most enjoyed when spent with Avery. They were skiing, traveling and adventure partners.

Lori's younger childhood days were spent in the Salt Lake City, Utah area and her teenage years were spent in Bartlett, Tennessee. She graduated from Bartlett High School in 1990. She then moved back to Salt Lake City to attend the University of Utah and then in 2003 she moved to McKinney, Texas. She worked primarily in IT for various software companies where she truly enjoyed her work and proved to be quite brilliant in a mainly male dominated industry.

Lori is preceded in death by her father, Douglas Gene Eubanks.

Lori is survived by her son, Avery Eubanks, her Mother, Carol Ann Eubanks, her siblings, Sandra Green, Cynthia Cantrell (Dr. John Cantrell), Brad Eubanks (Amber Gibson), Ryan Eubanks (Alynn Eubanks), and Tiffany Eubanks.

She is also survived by numerous nieces, nephews, cousins, aunts, and uncles.

Lori was generous, compassionate, witty, and just a pure joy to be with. She will be missed dearly by all who were privileged enough to know her. ***Until we meet again sweet Lori***

A Celebration of Life for Lori will be held
Saturday, October 24th, 2020
10:00 a.m. to 12:00 p.m.

Lori will be laid to rest at
Pecan Grove Cemetery
McKinney, Texas
